Breakfast Casserole

This breakfast casserole features the major breakfast food groups – eggs, sausage, and potatoes. With some coffee and juice to wash it down, you’re ready to take on King Kong. Nevertheless my standard breakfast is a few cups of coffee, some yogurt or a banana, and a couple of cigarettes (although if I have to go somewhere in the morning I like getting a sausage biscuit at Burger King) so I make this for supper more often than breakfast. But whenever you make it, it’s a great, easy, and inexpensive meal.

    I like your blog and check in every so often–a coincidence–I posted my version of breakfast casserole earlier in the week–no potatoes, bread is the base. Yours looks great–and I shall give it a try.

    My weekday breakfast is the same as yours. Politically incorrect, but nicotine and caffeine are a good match. The casserole looks great. Will try ASAP. (So tomorrow is Friday, that means make the thing on Saturday!)

    I think politics should stay out of breakfast – except for listening to NPR while I drink and smoke my breakfast. And as noted, I eat it for supper more often than breakfast. So put it off if you wish.

    oh, how I love breakfast casseroles! I don’t have any idea why, but I am so drawn to the idea of all my favorite things in one dish. Having not grown up in a casserole household, perhaps I am just making up for lost time.

    My mother made lots of casseroles, but it wasn’t one of her culinary strengths.
